Reduce inflammation with these salads


PERFECT SUMMER SALAD

Fresh corn, tomatoes, sugar snap peas, radishes and cucumber make the colorful and delicious display for this salad. Add avocado, red onion, mint, basil, thyme, salt and pepper with a drizzle of olive oil.

Spinach and persimmon salad

You can substitute any green for the spinach and any orange or yellow fruit or veggie. Try it with bell peppers, blood oranges or carrots. Top with walnuts or macadamia nuts and a squeeze of lemon.

Salmon and sweet potato salad

Use a base of romaine or butter lettuce, top with roasted sweet potatoes and roasted broccoli or brussel sprouts. Lay the roasted salmon on top and drizzle with your favorite avocado mayo or salad dressing.
